2 cups flour
2 cups sugar
1 cup salad oil
1 cup buttermilk
1 tsp baking powder
1/4 tsp salt
1 tsp vanilla
5 tbsp cocoa
2 eggs
2 tsp baking soda dissolved in 1 cup of hot water

High Humidity Icing:
4 cups confectioners sugar
1 1/2 cup shortening
1/4 cup flour
2 tbsp dream whip
1/2 cup milk (or more to desired consistency
Butter flavoring to taste
Directions:
Directions:
Dissolve baking soda in water, set aside. Put all ingredients in large bowl in order given. Beat on low speed, batter will be very thin.
Bake at 350º for 40-45 minutes (cupcakes 18 minutes).
Best when paired with Grammy's High Humidity Icing:
Combine ingredients in mixing bowl, beat with electric mixer and add milk to desired consistency.
