Bruschetta Recipe

1/2 large baguette, sliced & lightly toasted
4 firm ripe Roma tomatoes 8 -10 fresh basil leaves
1/2 c Parmesan cheese EVOO
S&P to taste

Optional;
Fresh chopped garlic, or Chopped red onion

Directions:
Slice baguette into thin slices. Put on cookie sheet and put under broiler until toasted. Turn over and toast second side. Remove from broiler, Drizzle with EVOO

Core the tomatoes. Cut in 1/2 and squeeze out the seeds. Dice small 1/4"
Stack the basil leaves on top of each other and roll tight. With a very sharp knife, slice the rolled basil leaves to make "ribbons". Add to tomatoes Add salt and pepper to taste
Stir in Parmesan Cheese. Drizzle with EVOO, stir gently

If using garlic or onions, add to tomatoes before you add the cheese.

Put tomato mixture in a pretty bowl with a spoon. Pile baguette slices around the dish and serve.
