Cookie Dough:

1 c. shortening
2 eggs
5 c. cake flour
1 tsp. baking soda
2 c. sugar
2 tsp. baking powder
1 tsp. salt
1 c. buttermilk
1 orange


Icing:
1 orange - retain and use the juice
1 lbs. powdered sugar
1 T. butter

Directions:
Directions:
Preheat oven to 350º F.

Cookies:

Finely grate the rind of one orange.
In a large bowl, blend shortening, sugar and eggs.
Add baking powder, flour, salt and baking soda.
Add buttermilk and grated orange peel.
Mix well.
Drop by teaspoon, onto parchment paper lined cookie sheet.
Bake at 350 approximately 10 minutes, depending on oven, until lightly browned.

When cooled, apply icing and allow icing to set.

Icing:

Grate orange . Squeeze orange and retain juice.
Beat together grated orange peel, powdered sugar and butter.
Slowly add orange juice until icing is the desired consistency for spreading.
