Marinade:
1/4 c lime juice
1/4 c olive oil
3 cloves garlic, minced
2 Tlb chopped cilantro
1 1/2 tsp salt
1 tsp cumin
1 tsp ground pepper
Whisk together - Reserve 1/4 cup for later


Directions:
Directions:
Pour marinade over 6 boneless chicken beast, and marinate 1 to 3 hours
Grill chicken, uncovered

Serve with rice with added lime zest and 1 Tlb of cilantro
Pour reserved marinade over cooked chicken

OR
Combine with 1 can corn drained
1 can black beans, drained, chopped red pepper, chopped green pepper and 1/2 pkg of fajita seasoning.

Serve with rice and chicken, YUM YUM!!

This marinade is so good, I double or tipple the recipe and use it for a sauce on the cooked chicken and over the rice.
