1/2 cup (113g) butter, softened
8 ounces (227g) extra sharp cheddar cheese, grated
1-1/2 cups (180g) all-purpose flour, sifted
1/2 teaspoon cayenne pepper
1/2 teaspoon salt
1/2 teaspoon paprika
3/4 cups pecan halves
3 tablespoons (43g) butter, melted

Directions:

Preheat oven to 375º. Line 2 baking sheets with parchment paper or silicone baking mat and set aside.
Add the softened butter and cheese to the bowl of a food processor and pulse until blended. Stir flour and seasonings together in a medium-sized bowl. Add half of the flour mixture to the cheese and butter mixture and pulse until the flour is blended. Add the remaining flour mixture and pulse until well blended. Remove the dough from the food processor bowl. The dough should be the consistency of play-dough. Scoop into 2-inch balls, and flatten to about 1/4" thickness. Place 1/2" apart on prepared baking sheets. Toss the pecan halves with melted butter. Lightly press one pecan half in the center of each cookie. Bake for 12-14 minutes, or until the cookies are just beginning to brown around the edges. Cool completely on a wire rack before storing in an airtight container.
