Asian Papaya Salad Recipe

2 cups shredded, green papaya (The papaya can be found at Asian grocery stores. It's not the sweet papaya found in your regular grocery store.)
2 T toasted peanuts
2 cloves peeled garlic, minced
1 to 2 fresh bird's eye chilies (I used 1 jalapeņo, deseeded & minced)
7 cherry tomatoes or other tomatoes with an equivalent amount
Juice of 1/2 lime
1 T olive oil
1 1/2 T fish sauce
2 T chopped cilantro
Salt & pepper, if needed

Directions:

Roughly crush a small handful of unsalted peanuts with a mortar & pestle. Set aside.
Shred the papaya with a shredder or mandolin to thin strips. Soak them in cold water while you prepare the rest of the salad. This makes the papaya crunchier.
Mince the chilies & garlic. Add them and all other ingredients to the drained papaya. Top with chopped cilantro.
Note: you may need to add a little more olive all. Do the taste test & add if needed.
