1 large head cauliflower, roughly chopped
6 hard boiled eggs, chilled & chopped
1 cup diced onion
2 celery stalks, diced
1/2 - 3/4 cup chopped dill pickles
1/4 cup chopped chives or green onions
3 T vinegar
2 T chopped dill weed, optional
2 T chopped parsley, optional
Salt & pepper, as desired

1/2 envelope dry ranch dressing
1 1/2 cups mayo
1/2 cup sour cream
Dijon mustard, to taste
2 T cream

Directions:
Directions:
Place cauliflower in a large microwaveable bowl and add 1/3 cup water. Cover & microwave 6 to 8 minutes or until soft. Meanwhile, in a medium bowl, mix together the ranch mix, mayo, sour cream, dijonaise & salt & pepper. Set aside. When cool enough to handle the cauliflower, drain excess water & blot dry. Chop cauliflower into small pieces. Add all other ingredients, toss & chill.
