2 T olive oil
2 cloves garlic, minced
4 zucchinis, diced
1 cup corn kernels (roasted)
1/4 tsp dried basil
1/4 tsp dried oregano
1/4 tsp dried thyme
Kosher salt & black pepper, to taste
Juice of 1 lime
2 T chopped fresh cilantro
2 T grated, fresh Parmesan cheese

Directions:
Directions:
Heat olive oil in skillet over medium high temperature. Add garlic, and cook about 30 seconds. Add corn and brown slightly. Add zucchini and stir fry for 3 to 5 minutes.
At the end, add the cilantro, lime juice, salt & pepper & Parmesan cheese.
