2 tbsp Olive oil
3 cloves garlic, minced
pinch of salt & pepper
4 c water
4 c lightly packed baby spinach
2 carrots, diced
1 tsp chopped thyme
1 pkg (900ml) chicken broth
1 1/4 c small shell pasta
3 c shredded rotisserie chicken
1/2 c shredded Parmesan cheese

Directions:
Directions:
In large sauce pan, heat oil over medium heat; cook carrots, garlic, thyme, salt & pepper, stirring often, until slightly softened, about 5 minutes. Pour in broth and water; bring to boil.

Add pasta; cook until al dente, about 8 minutes.

Stir in spinach and chicken; cook until chicken is warmed through, about 2 minutes.

Sprinkle with parmesan cheese.
