Grandma's Lemon Meringue Pie Recipe

1 c. white sugar
2 tbsp. all-purpose flour
3 tbsp. cornstarch
1/4 tsp. salt
1 1/2 c. water
*2 lemons, juiced and zested (no more than 1/3 cup juice)
2 tbsp. butter
3 egg yolks

Directions:
Directions:
1. Preheat oven to 350º F.
2. Prick the pie crust with a fork and bake for 14 minutes.
3. In a medium saucepan, whisk together the sugar, flour, cornstarch, and salt.
4. Stir in water, lemon juice and lemon zest.
5. Cook over medium-high heat, stirring frequently, until mixture comes to a boil.
6. Stir in butter.
7. Place egg yolks in a small bowl and gradually whisk in 1/2 cup of hot sugar mixture.
8. Whisk egg yolk mixture back into remaining sugar mixture.
9. Bring to a boil and continue to cook while stirring constantly until thick.
10. Remove from heat.
11. Pour filling into baked pasty shell.
12. Immediately spread prepared meringue over pie and bake for 10 minutes. See Meringue recipe.

Tips: First, divide eggs (4 whites and 3 yolks for each pie) into bowls so they are ready to go. Make meringue then make the pie filling.

*We used juice from 2 lemons and it was too tart (the lemons were large)
