4 peaches
butter
honey
8 oz marscapone
2/3 cup heavy cream
1 tsp vanilla
flaked almonds

Directions:
Preheat oven to 350ºF.

Slice your peaches into halves, removing the stones as you go. Place the halves into a baking tray and top each with a little knob of butter. Drizzle honey over the top. Be as generous as you like, but remember peaches are already quite sweet so don't go crazy.

Put them in the oven for about 20 minutes. Keep an eye on them to make sure they don't burn. While they're cooking, mix together marscapone, cream and vanilla. Set aside in fridge. Heat a dry frying pan and add almonds. Flip them around the pan until brown, taking care not to let them burn. Let cool.

Put a peach on a plate, spoon some of the sauce from the pan over the top, smother in marscapone cream and sprinkle with almonds.
