4 salmon filets ( 5 to 6 oz each)
1/4 plus 3 tsp AP flour ( or gluten free equivalent
Salt & lemon pepper to taste
1T butter
1 T olive oil
2 to 4 T capers, depending on preference
1 cup chicken stock
1/3 cup white wine
1/4 cup freshly squeezed lemon juice.
4 garlic cloves
2 T chopped parsley

Directions:
Directions:
Melt butter & 1 T oil in a large skillet.
Salt & pepper filets and dredge in 1/4 cup flour.
Sauté filets on medium high heat 2 1/2 to 3 minutes per side, depending on thickness of filets. Remove to a warm plate & cover with foil.
