1 cup water
2 tbsp light corn syrup
1/2 tsp grated orange rind
1/4 tsp salt
1 cup flour
2 eggs
1 quart corn oil
1/4 cup sugar
1 tsp ground cinnamon

Directions:
Directions:
In a 2 quart saucepan bring water, corn syrup, orange rind and salt to a boil over medium heat; remove from heat. Stir in flour. With a whisk beat until the mixture is smooth. Beat in eggs, one at a time until mixture is smooth. Spoon batter into a pastry bag with a large star tip.

Pour corn oil into electric skillet to depth of 1/2 inch, filling no more than 1/3 full. Heat to 375ºF. Carefully, pipe 3-inch strips (cutting with knife or scissors as batter is piped) into corn oil. Fry, a few at time, 2 or 3 minutes until golden. Drain on paper towels.

Mix sugar and cinnamon. Roll each churro in sugar mixture.
