1/2 cup Butter Flavor Crisco
1 cup peanut butter, creamy
3/4 cup granulated sugar
1/2 cup brown sugar, firmly packed
1 tablespoon milk
1 teaspoon vanilla
1 egg
1 1/4 cups all-purpose gluten free flour
1/2 teaspoon xanthan gum
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt

Heat oven to 375 ºF. Cream Crisco, peanut butter, granulated sugar, brown sugar, milk and vanilla in large bowl at medium speed of electric mixer until well blended. Beat in egg. Combine flour, xanthan gum, baking soda, baking powder and salt. Mix into creamed mixture. Drop rounded tablespoonfuls of dough 2 inches apart onto ungreased baking sheet. Flatten in crisscross pattern with fork dipped in flour. Bake for 8 to 10 minutes. Cool 2 minutes on baking sheet. Remove to cooling rack.

Bob's Red Mill gluten free all purpose flour is good in this recipe. Xanthan gum helps prevent cookies from crumbling.
