1/2 cup shortening
1/2 cup butter
1 cup brown sugar, packed
1/2 cup granulated sugar
2 eggs
1 teaspoon vanilla
1/2 teaspoon baking soda
1/2 teaspoon xanthan gum
2 1/2 cups all-purpose gluten free flour
2 cups semisweet chocolate chips

Directions:
Directions:
Beat shortening and butter with electric mixer; add sugars, eggs, and vanilla. Beat until well mixed together. Add baking soda, xanthan gum and flour; mix thoroughly. Stir in chocolate chips.

Drop dough by rounded teaspoons 2-inches apart onto an ungreased cookie sheet. Bake in a 375 ºF oven for 8 to 10 minutes or until edges are lightly browned. Cool cookies on wire rack.

Pan cookies:
Spread dough on ungreased cookie sheet. Bake in a 375 ºF oven for 20 minutes or until edges are lightly browned. Cool and cut into squares.

Bob's Red Mill gluten free all-purpose flour is good in this recipe. Make sure to use xanthan gum because it helps prevent cookies from crumbling.
