Ingredients: 6- garlic cloves 2 Jalapenos 1/4 cup red wine vinegar 1 bunch fresh Italian parsley finely chopped 1 handful fresh oregano finely chopped 2- limes juiced 1 cup olive oil 1 teas kosher salt 1 teas black pepper 4 lbs of skirt steak

Directions:Combine garlic,jalepenos and vinegar in a bowl. Stir in the parsley, oregano and lime juice Whisk in olive oil and season with salt and pepper. Mix well and set aside leave at room temp for the flavors to mesh. Marinate the steak in olive oil for 30 minutes and coat both sides. Pre heat the grill. Remove steak from oil and season both sides with salt and pepper generously. Grill the steak on the hottest part of the BBQ for 4 minutes each side until well charred. Tranfer the steak to a cutting board and let stand 5 minutes. Cut the steak across the grain on the diagonal and fan the slices out on a platter. Spoon somre of the sauce over the steak and serve the remaining on the table. |
