3/4 oz dried wakame seaweed (whole or cut)
3 T rice vinegar (not seasoned)
3 T soy sauce
1 T sesame oil
1 t sugar
Red pepper flakes
1 t finely grated ginger
1/2 t minced garlic
2 scallions, thinly sliced
1/4 c shredded carrot
1 T toasted sesame seeds
Opt. - thinly sliced cucumber

Directions:
Directions:
Soak seaweed in warm water to cover, 5 minutes. Drain, rinse, then squeeze out excess water. If wakame is uncut, cut into 1/2 " wide strips.

Stir together vinegar, soy sauce, sesame oil, sugar, pepper flakes, ginger & garlic in a bowl until sugar is dissolved. Add the seaweed, scallions, carrots & cilantro, tossing to combine well. Sprinkle with sesame seeds.

You can mix the seaweed salad with rice or cellophane noodles for a lighter taste.
