2 c fresh basil
1 c fresh Italian parsley
1/2 c grated Parmesan or Romano cheese, packed , freshly grated is best
1/2 c toasted pine nuts
4 garlic cloves
1/4 t salt
1/8 t red pepper flakes ( we like a little more)
1/3 c olive oil
1 T lemon juice
2 T water

Directions:
Directions:

Toast pine nuts in a skillet on medium heat - 10 to 15 minutes. They should be nice & brown.

Wash basil & parsley leaves & spin dry.

Combine all ingredients, except olive oil, in a blender or food processor; pulse until finely chopped.

Add olive oil in a thin stream. Mix well & enjoy.

You can freeze this if it's more than you need. Sometimes I use ice cube trays, other times, half pint jars, depending on how much pesto I have.

This is excellent on pasta or as a pizza topping.

For pasta, mix pesto and a little heavy cream in with the pasta. Add shrimp, crab or fish.

For pizza, add sliced crimini mushrooms, reconstituted sun dried tomatoes, sliced black olives and shaved Parmesan cheese.
