1 head cauliflower, broken into even sized florets
1 red onion, cut into wedges
1 (15oz) can garbanzo beans, rinsed & drained
2 T olive oil
1 t sea salt
1/2 t fresh ground black pepper
1/3 c of any nut butter, preferably natural
1/2 c water
1 T gluten free soy sauce
1 T rice vinegar
1 T brown or coconut palm sugar
1 garlic clove, grated
1 (1 inch) piece of fresh ginger, peeled & grated or minced
1 t (or more) Siracha or other garlic chile sauce
1/2 c cilantro leaves, coarsley chopped

Preheat oven to 400º F. Place the cauliflower on one baking sheet & the onions & garbanzo beans on another. Drizzle with olive oil, salt & pepper. Toss to coat well & roast until veggies are tender, about 15 minutes.

While the veggies Re roasting, combine the nut butter, water, soy sauce, vinegar, sugar, garlic, ginger & is racha in a small sauce pan over med heat. Cook the sauce, stirring until the nut butter is melted, about 2 minutes.

Place the veggies in a serving bowl, pour the sauce over and toss to coat. Add the cilantro and stir to combine. Can be served warm, at room temperature or cold.
