1 lb dried black beans
1 lg onion, chopped
1 green pepper, chopped
6 cloves garlic, minced
1 (4oz) jar diced pimiento, drained
1/4 c olive oil
5 c water
1 6 oz can tomato paste
1 T vinegar
2 t salt
1 t sugar
1 t pepper
Hot cooked rice
Shredded cheddar cheese, opt
Chopped tomatoes
Chopped green onions

Directions:
Directions:
Sort & wash beans; place in a large Dutch oven. Cover with water 2 " above beans; let soak 8 hours, drain well.

Sauté onion, green pepper, garlic & pimiento in olive oil until tender.

Combine the beans, sautéed vegetables, 5 c water & next 5 ingredients. Bring to a boil; reduce heat & simmer 1 1/2 hours or until beans are very tender, stirring occasionally. Serve over rice. Garnish with cheese, tomatoes & green onions.
