Ingredients:  
1 rotisserie chicken, shredded
2 med poblano peppers, chopped
1 med jalapeño pepper de-seeded & minced, optional
1 med onion, chopped
2 cloves garlic, minced
2 T olive oil
1 box, chicken stock ( 4 c)
1 28oz can fire roasted, whole tomatoes, drained & chopped ( recommend Muir Glenn tomatoes)
3 cans of white beans (any kind), partially smashed
Juice from 2 limes
1/4 c chopped cilantro

Directions:
Directions:
1. Sauté veggies until soft.
2. Add the drained tomatoes, broth & white beans. Bring to a boil, reduce heat and simmer
for about 30 minutes.
3. Add the shredded chicken, lime juice & cilantro during the last 5 minutes of cooking time.

Serve with grated cheese, green onions, avocado & taco chips.
