1 cup quinoa
1 (15.5 oz) can black beans, drained and rinsed
1 (15.5 oz) can sweet corn, drained
1 red bell pepper, diced
1/4 cup cilantro, chopped
3 tablespoons lime juice
2 tablespoons olive oil
1 teaspoon cumin
optional: 1 chipotle pepper in adobe sauce

Directions:

Cook quinoa (bring quinoa and 2 cups water or chicken broth to a boil, cover, reduce heat to simmer and cook until water is gone; about 20 minutes)
Combine beans, corn, pepper and cilantro in a bowl.
Stir in cooked quinoa.
Combine lime juice, oil and cumin in small bowl. Stir in chipotle pepper, if desired.
Toss with quinoa mixture. Season with salt and pepper to taste. Serve warm or chilled.
