1 c natural peanut butter, smooth or crunchy

1 c sugar

1 lg egg, lightly beaten

1 T vanilla extract

Preheat oven to 350º F & line a baking sheet with parchment paper.

Mix all ingredients until well combined.

OUsing a medium cookie scoop, scoop about 1 1/2 Tof dough. Place 1 1/2" apart on a baking sheet.

Flatten the dough balls with the tines of a fork, making a cross pattern on the cookies.

Bake 10-12 min. or until golden around the edges. Allow cookies to rest on the counter for several minutes before transferring to a cooling rack.
