Sugar-Free Baklava Recipe

3 cups walnuts (finely ground in a food processor)
2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1 1/2 cup Clarified Butter (pg. 69)
1/2 cup honey
24 sheets of phyllo dough (For safety make sure you have extra.)

Preheat the oven to 325ºF.

Combine the walnuts and spices in a medium bowl. Stir well until spices are evenly distributed. Set aside 1/2 cup of the clarified butter and stir the honey into the remaining 1 cup of clarified butter. Brush the bottom of a 13x9x2-inch baking pan with some of the clarified butter.

Open the phyllo dough and cover it with plastic wrap then a damp paper towel to keep from getting dry. After every use cover it up again. Put a sheet of phyllo dough into the pan and brush it with clarified butter. Repeat with 9 more sheets, brushing with clarified butter each time. You should have a total of 10 sheets.

Spread 1/3 of the walnut mixture over the phyllo dough. Place a sheet of phyllo dough over the mixture and brush it with the honey/butter mixture. Add a second sheet and brush it with some honey/butter mixture. Repeat until all of the walnut mixture is used up.

Top with 10 sheets of phyllo dough, brushing each one with clarified butter. If you run out, microwave a couple tablespoons of regular butter to finish up. With a sharp knife cut the baklava into diamond shapes. A way to do it is: Cut it lengthwise into 4 equal sections then cut diagonally across the first cuts.

Bake it in the oven for 45 minutes. Then reduce the heat to 275ºF and bake for another 20 minutes. Remove from the oven and immediately spoon the cool honey syrup over the baklava. Let the baklava cool completely before serving.
