1 (1 lb) box Ziti Regate pasta
1/4 c. olive oil
1 can Green peas (English Peas)
black olives
tomatoes
Parmesan Cheese
salt & pepper to taste
fresh garlic minced (roasted then minced if you don't car for raw)

Directions:
Directions:
Cook pasta according to package directions. The amount of vegetables is determined by how much you like for this amout of pasta. It's your choice. Chop tomatoes, black olices and garlic. Put them in a bowl. Pour olive oil over them and add salt and pepper to taste and a tablespoon of grated Parmesan cheese, or more if you like. Mix. When pasta is ready , drain but leave about a tablespoon of the hot water in the pot. Mix all ingredients in pot. Serve salad warm or put in refrigerator and serve cooled.

For variations, add cubed ham, Muenster cheese, mushrooms, string beans, broccoli, etc. Be creative and enjoy.

This is not "TEX-Mex" or should we say "TEX-Italian". Lorraine is full-blood Italian with her 13 siblings (pictured above). Lots of black headed, olive complected, handsome brothers and beautiful sisters in the Caputo family from New York City. Lorraine's mother (seated, in pink sweater next to Lorraine in center of picture) was a wonderful cook and past that talent and wonderful recipies to Lorraine.
