Glazed Apples: 1/4 cup butter 4 apples, cored and cut into rings 1/2 cup apple juice 1 tbsp lemon juice 1/4 tsp ground ginger 1/4 tsp ground cinnamon 1/2 cup sugar

Directions:Crepes: Mix flour, sugar, baking powder, and salt in 1 1/2-quart bowl. Stir in remaining ingredients. Beat with hand beater until smooth.
Lightly butter a 6 to 8 inch skillet; heat over medium heat until bubbly. For each crepe, pour about a 1/4 cup of the batter into skillet, IMMEDIATELY rotate skillet so a thin film covers the bottom. Cook it until it's light brown. Run a wide spatula around the edge to loosen it. Flip it over until other side is light brown. Stack crepes on a plate and keep covered.
Glazed Apples: Heat butter in a large skillet over medium heat until melted. Fry several apple rings at a time, turning once, until golden brown. (Add more butter if necessary) Return all apple rings to the skillet.
Mix apple juice, lemon juice, ginger, and cinnamon; pour over apples. Sprinkle with sugar. Cover and cook over medium heat until apples are tender and glazed, about five minutes.
Take the crepes and arrange them neatly onto plates. Then take the apples and divide them between the crepes. Top with whipped cream and enjoy. |
