1 cup shortening
1 cup brown sugar
1 cup molasses
1 cup sour milk (1 tbsp vinegar in 1 cup milk)
3 cups flour to start (will use about 5 cups total when done)
2 tsp baking soda
1 tsp salt
1 tsp ginger
1 tsp cinnamon
1 tbsp vinegar
Glaze: 2 cups confectionary sugar and milk/cream with a tsp vanilla to spreading consistency

Cream shortening and brown sugar; add molasses and sour milk. In separate bowl, mix 3 cups flour, soda, salt ginger, cinnamon; add to 1st mixture with vinegar and mix until all is moistened. You will add about 2 more cups flour, keeping dough soft. Chill overnight, or for a few hours. When chilled, you will roll out dough on a floured board (I do it on the cupboard). You can cut it into cookie shapes (you can use a glass if you don't have anything). Or you can use cookie cutters (I always make at Christmas with Christmas shapes). Do about a third of the dough at a time. Don't roll too thin or too thick (they will rise some). You can add a glaze while still warm. I like to add sprinkles or a little food coloring during the holidays. 350 degrees about 12 - 15 min.
