Directions:Cream shortening well. Add sugar gradually. Cream together. Add milk and vanilla to beaten eggs mixture. Sift all dry ingredients together and add alternately with liquid ingredients and creamed mixture. Chill 15 minutes to half hour. Grease two large baking sheets with non stick spray and set aside. Lay out a long piece (3ft.) of waxed paper. Roll out small portions of dough at a time, to about 1/4" thickness. Cut out 3 inch rounds, continuing till you have covered one baking sheet and cookies are at least 1 inch apart. Once you have a baking sheet covered in cut out circles, add about 2 ts. jelly in center of each. Then roll out additional dough again, making identical circles, but this time, use the vanilla bottle cap to press out a hole in the center of the rounds, placing them on each jelly topped cookie and pressing edges slightly together. Once you have one baking sheet ready, you can place it into a 350 oven uncovered on middle shelf for about 8-12 minutes. You MUST either time or watch well so as not to over bake cookies. They should be slightly golden and jelly bubbling. Remove from oven, lightly sprinkle with cinnamon and let sit on cookie sheet till cool. Meanwhile, start your second batch. You should easily get two sheets of cookies or about 4 dozen. |

Notes: This recipe is not an exact science! You must get your dough to a good, billowy consistency, just dry enough to easily roll out without sticking too much to the rolling pin but not so wet that you cannot work with it. It should have the feel and texture of a nice unbaked pizza crust. This is why it is so important not to add all ingredients at one time so you can easily adjust the texture of the dough by adding more or less flour or more or less liquid. Be sure to lightly flour your waxed paper before you begin rolling out dough, and sprinkle additional flour as you go along so dough will resist sticking to waxed paper or rolling pin. This is one recipe that there is NO getting around making at the holidays! Christmas without jelly cookies is like Christmas without Santa!
