- 1 1/2 cups diced potatoes
- 2 cups diced beets
- 1 tsp salt
- 1 tbsp vinegar

- 1 cup sliced carrots
- 2 cups shredded cabbage
- 1 tbsp chopped parsley
- 1 tbsp dill weed
- 1/4 cup chopped onion
- 1 quart canned tomatoes
- 1 stalk celery
- salt & pepper to taste

- 1/3 cup butter
- 1/2 cup onion
- 1 1/2 tsp chopped dill weed
- 1 tbsp sugar

Directions:
Directions:
Add first 4 ingredients to pot, cover with water and boil, then add rest of the ingredients and boil for 30min

Final 4 ingredients: melt butter in pan, add the onion and simmer till tender (not brown) then add dill and sugar. Add this to soup and boil 10 minutes longer

Remove from heat and let rest for 30min

Serve with sour cream (if desired)
