1 1/2 cup Graham Cracker Crumbs
1/4 cup (1/2 stick) Butter (melted)
2 (8oz.) pkgs. Cream Cheese (softened)
2 Eggs (slightly beaten)
1 cup Raspberry Jam
1/2 cup (1 stick) Butter
1/2 t. Vanilla
1/4 t. lemon Zest
1/4 t. Cinnamon
1/8 t. Salt

1. Preheat oven to 350° and line a 9x13" baking dish with parchment paper, leaving a 2" overhang on both sides.

2. In a large bowl, mix melted (1/4 cup) butter into graham cracker crumbs until you have the consistency like that of wet sand.

3. Transfer mixture to baking dish and use your hands (or the bottom of a measuring cup) to pack crumbs into the dish.

4. In a large bowl, beat cream cheese, sugar, (1/2 cup) butter and eggs together, then mix in vanilla.

5. Pour cream cheese mixture over graham cracker crust and use a rubber spatula to even off the top.

6. Heat raspberry jam in a small sauce pan over low heat. Once warmed ( and more liquid-y)drizzle over cheese cake to create stripes on the surface.

7. Take a knife and gently drag it across the stripes of the jam to create a marbled surface layer.

8. Place baking dish in oven and bake for 20-25 minutes, or until cheesecake is set.

9. Remove from oven and let cool completely.

10. Cut into squares and Refrigerate at least 2 hours before serving.
