3 eggs
1 c. sugar
2/3 c. mashed pumpkin
1 tsp. lemon jusice
3/4 c. flour
1/4 tsp. salt
1 tsp. baking powder
1 tsp. each cinnamon, ginger and nutmeg
confectioners' sugar
1 8-oz. package cream cheese, softened
1/4 c. butter, softened
1 1/2 tsp. vanilla extract
chopped nuts

Directions:

Beat eggs in mixer bowl for 5 minutes. Beat in sugar gradually. Stir in pumpkin and lemon juice. Sift next 6 dry ingredients. Fold gently into pumpkin mixture. Spread in greased jelly roll pan. Bake at 350 for 15 minutes. Turn onto towel sprinkled with confectioners' sugar. Roll as for jelly roll; coll. Blend 1 cup confectioners' sugar and remaining ingredients except nuts in bowl. Unroll cake. Spread with cream cheese mixture; re roll. Roll in nuts.
