•1 tablespoon water
•1½ teaspoons unflavored gelatin
•12 oz colby cheese cut into large cubes
•1 tablespoon non-fat milk powder (*see note)
•1 teaspoon salt
•⅛ teaspoon cream of tartar
•½ cup + 2 tablespoons whole milk (that's the halfway point between the ½ cup and ¾ cup btw if you want to eyeball it)

1.Line an approximately 5x4-inch container with plastic wrap so it hangs over the sides. I re-purposed a 1-lb strawberry container but you can also buy disposable aluminum loaf pans in the right size.
2.Put water in small bowl, sprinkle gelatin over the top and set aside.
3.Place colby cheese, milk powder, salt, and cream of tartar in blender. Pulse 5-6 times until combined (I used setting #5 on my Vitamix).
4.Using a microwaveable measuring cup, nuke milk just until boiling, approx 1:20 depending on your microwave. Immediately whisk in gelatin. Pour into blender, place lid back on top. Blend starting on low speed (#3 on Vitamix) and increasing to high. Blend until smooth, about 30 seconds.
5.Immediately scrape out cheese into prepared pan making it as smooth as possible. Cover with the overhanging plastic wrap and chill for at least 3 hours. It can be stored, tightly wrapped in plastic wrap, for up to 1 month.

*Whole milk powder is supposed to give an even better consistency but I could not find it at any grocery store I went to. The consistency I got with the non-fat powder was exactly the same as Velveeta.
