2 tsp. grated orange rind
3 tlb strained orange juice
1/2 cup shortening
1 cup sugar
2 eggs
1 1/2 cups AP flour
2 1/4 tso baking powder
1/4 tsp salt
1/2 cup water

Orange Filling:
2 tlb butter
4 tlb cornstarch
2 tlb grated orange rind
1 cup sugar
1 cup OJ and pulp
1/2 tsp salt
1 1/2 tlb lemon juice

Cake:
Place grated orange rind in juice and let it stand. Save the orange pulp for the filling

Cream the shortening, add the sugar gradually and cream thoroughly

In a separate bowl, beat egg yolks until thick and creamy and add to sugar mixture

Sift flour, baking powder and salt together and add to creamed mixture alternately with liquids (OJ, rind and water)

In a separate bowl, beat egg whites until stiff, fold into cake mixture and pour into two greased and floured 8" cake pans. Bake 30 - 35 minutes at 350*

Filling:
Melt butter in double boiler, blend in cornstarch. Add orange rind, OJ w/pulp and sugar. Mix well and bring to a boil, stirring constantly. Place over boiling water and cook until thickened, about 15 minutes. Remove from boiling water add salt and lemon juice. Cool

Boiled Orange Frosting

Boil 3/4 c sugar and 1/4 cup water together, until it spins an 8" thread (242*). Pour hot syrup over 2 stiffly beaten egg whites and beat until mixture holds its shape. Then add 1 tsp orange extract and mix well.

Cover top and sides of cake and serve
