1 c flour
1 1/2 tsp. baking powder
3 eggs
6 TB hot water

Directions:

Mix and sift the dry ingredients, stir flour into well-beaten eggs until lemon colored, add hot water a little at a time, beat the batter well. Pour into well-greased jelly roll pan (with sides) 15" x 10" or line pan with wax paper. The batter should be spread 1/4" deep. Bake in 375 degree oven about 10 to 12 minutes. Done when finger pressed lightly on top of cake springs back, cake slightly brown. Place on dish towel dusted with powdered sugar, remove paper and roll from long side. Cool. Unroll and spread the beaten jelly probably 1 c on the roll. (Cherry jelly or currant is good). Roll the jelly roll back up with the jelly spread on cake. Good with a dollop of whipped cream or cool whip.
