Melt 3 tbsp. butter in saute pan. Add 4-5 cloves crushed garlic. Cook garlic until beginning to brown. Add 1 lb. peeled and deveined prawns. Saute until almost pink, add 2-3 chopped green onions and parsley. Continue to saute. Add 3-4 tbsp. dry sherry. Reduce down very well.
Pull off heat and add a couple of tbsp. chunked butter, stir to melt. This will thicken the sauce. Serve immediately.
Georgia's Note: A little bit of fresh lemon juice would be good to add.
