Orange Marmalade Bundt Cake Recipe

1 c sugar
3/4 c butter, softened
3 eggs
1 Tbsp orange peel
1 tsp vanilla
1 1/4 c orange marmalade (from 12 oz jar)
3 c flour
1 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1/3 c juice from 1 orange plus water if needed
1 (5 oz) can evaporated milk
1 c chopped pecans

Glaze:
remainder of 12 oz marmalade jar (about 4 Tbsp)
1 c powdered sugar
1 Tbsp butter
1/2 tsp orange peel
4-5 tsp milk

Directions:
Directions:
Heat oven to 350º.

Mix sugar and 3/4 cup butter in bowl until creamy. Add eggs, 1 Tbsp orange peel, vanilla, and 1 1/4 cup orange marmalade and mix until smooth.

Combine flour, baking soda, baking powder and salt. Add to orange mixture, add orange juice and evaporated milk, stir in pecans by hand.

Spoon batter into greased and floured Bundt pan. Bake for 50 minutes until just set, bake up to additional 10 minutes if needed. Cool in pan 10 minutes; remove from pan. Cool Completely.

Mix all glaze ingredients except milk in bowl. Beat at low speed, scraping bowl often and gradually add enough milk for desired glazing consistency.

Pour over cooled cake allowing to drizzle down the sides.
