1/2 bell pepper, chopped
1 can black beans, drained
1/4 cup fresh cilantro, chopped
1/2 can corn, drained
1/2 onion, chopped
1 cup cooked rice
1 tsp black pepper
1 tsp salt
1 tsp oil
1 tsp cumin
8 flour tortillas
1 1/2 cup shredded Mexican cheese

Directions:
Directions:
Cook rice, set aside.

Heat olive oil in pan, cook pepper, beans, cilantro, corn, onion, salt, pepper, cumin until veggies are soft.

On tortilla, place small amount of rice, veggie mixture and top with cheese. Fold into burrito and place on panini press until crisp.

Serve with salsa, sour cream and guacamole.
