2/3 c. sugar
2/3 c. butter
1 lg. egg
1 tsp. vanilla
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
1/4 c. 2% or whole milk

Preheat Oven to 350º.
In a large bowl, cream butter and sugar with a hand mixer until light and fluffy. Add eggs and vanilla. Combine flour, baking powder, and salt in separate bowl and whisk to mix. Add dry ingredients to creamed mixture alternating with milk as you continue to mix it until combined. Cover and refrigerate overnight.

Roll out dough into a thin sheet (1/8-1/4 in. thick) using a lightly floured rolling pin. Cut out cookies using a cookie cutter or jar rim and place on a cookie sheet an inch apart. Cook at 350º for 8 minutes or until light brown at the edges.

I once told Caroline I was worried that Mike eats the whole batch of these in one day when she sends them. She came up with a great idea by hiding small servings of the sugar cookies around the house so he was still getting surprised when finding them weeks later!
