Ingredients: 2 cups Milk 3 tbs flour 1/2 stick Butter 1/4 cup diced onion 1 Bayleaf 1/4 tsp freshly grated nutmeg 1 1/2 cups white cheddar cheese 1 1/2 cups yellow cheddar cheese 1 cup or more lobster meat Salt White pepper 3 cups Cook elbow macaroni

Directions:Preheat your oven to 425° Cook your elbow macaroni until tender, drain and set aside in a bowl. In a heavy saucepan heat up your milk and add your Bayleaf, chopped onion and nutmeg. Bring to a very low simmer. In another saucepan melt your butter and add your flour to make a Roux. Slowly add in your milk mixture stirring constantly until thick. Slowly incorporate your two cheeses until thoroughly melted and Incorporated. Add the lobster meat and folding them thoroughly. Transfer to a deep dish vessel and place in your oven. Turn the heat down to 325° and cook until golden brown and bubbling, 30 minutes give or take some. |

Notes: This is a real simple and basic mac & cheese and it's really delicious. You can experiment with different cheeses. Guyier cheese is excellent in this dish. You can also use crabmeat or shrimp as a substitute for lobster. I've also made this dish with prosciutto ham and green peas.
