One cup of salt
1/2 cup of brown sugar
3–4 cups of fresh squeezed celery juice. (Natural nitrates).

Directions:
Bring the water salt and sugar to a boil until all the crystals are dissolved. Remove from heat, add in the celery juice and let cool to room temperature. this is enough marinade for one large slab of pork belly. Typically, you marinate for about three days with this solution.
