Ingredients: 1 cup butter or margarine 1 1/4 cups light molasses 3/4 cup light brown sugar, firmly packed 4 cups flour 1 tsp. baking soda 1 tsp. salt 2 tsp. ground ginger 1 tsp. ground cinnamon 1/2 tsp. ground cloves

Directions:Melt butter or margarine in a saucepan; add molasses and sugar. Heat until sugar is dissolved, stirring occasionally; set aside to cool. Sift dry ingredients together and blend thoroughly. Add in fourths to cooled mixture, blending well after each addition. Wrap dough in plastic wrap; refrigerate one or two days to ripen the dough. Roll one fourth of the dough out at a time about 1/8 inch thick on a lightly floured surface. Cut with 3-inch round or fancy cookie cutters. Transfer to parchment-lined cookie sheets and bake in a preheated 375º oven for 6 to 7 minutes. Cool on wire racks. |

Notes: This recipe was our Great Aunt Florence's. It is very old, as you can see in the directions about "ripening the dough." What a surprise, we didn't know dough could be ripened!
