2 chicken breasts, cubed
1 can (14.5 oz.) diced tomatoes (do not drain)
4 cloves garlic, pressed
1 medium onion, chopped (approx. 2/3 cup)
1 red bell pepper, diced
2 tbsp. vegetable oil
Chili paste to taste
1 1/2 cups shredded mozzarella cheese

Directions:

Combine all ingredients, except cheese.

Divide equally into two serving sized clay tava dishes or oval au gratin style baking dishes. A small casserole dish will also suffice.

Cook in a preheated oven, 475º for 20-15 minutes, until liquid is bubbling and chicken is mostly cooked.

Remove from oven, top with shredded cheese, return to oven and bake and additional 8-10 minutes to melt the cheese layer.

Traditionally served with white rice.

Note: Glass casserole dish will require less cooking time than stoneware.
