One 24 ounce package of Frozen Spinach, thawed
1 1/2 cups Heavy Cream
1/4 teaspoon Ground Nutmeg
2 Tbsp Butter
2 Tbsp Flour
1 teaspoon Kosher Salt
1/4 teaspoon Ground Pepper

Directions:
Directions:
Place spinach in a large saucepan and heat to a low simmer. Add cream and nutmeg and simmer for 5 minutes. Melt butter in a skillet and add flour to make a roux. Stir into spinach, and add salt and pepper. Simmer for 5 minutes until slightly thickened. Top with a sprinkle of paprika and serve.

I found this recipe in Joe's Stonecrab Cookbook. Joe's is our favorite restaurant, and Gary and I have visited Joe's in Miami Beach, Las Vegas, and Chicago.
