1 Qt chicken stock, 1 Qt beef stock, 2 large Spanish onions, sliced thin, 1 tbsp butter, 2 tbsp olive oil, salt, pepper, 1/4 cup of sherry or brandy.

Directions:
Directions:
Heat butter and oil in a large pot. Add slice onions and saute until soft and golden. (about 1/2 hour) Add both stocks and bring to a boil, simmer for 15 minutes. Add salt and pepper. Add sherry or brandy and continue to cook for another 10-15 minutes. Serve with croutons or toasted French bread and melted cheese on top.
