1 lb. soft cheese - Kaseri, Kofaltiri or even mozerella or provolone
2 T. butter
2 T. brandy
1/2 lemon

Directions:
Directions:
Heat oven to broil at 550 degrees or so.

Cut cheese into 3 wedges. Arrange on broiler pan or cookie sheet. Pour melted butter on cheese. Broil 4-6 minutes until cheese is bubbly and lightly toasted. Pour brandy over hot cheese. Ignite. Squeeze lemon over cheese. Serve with bread, crackers or whatever sounds good.

Drink some ouzo and smash a plate. Ump-ah!

This recipe is one that Connie's husband made in his restaurant in San Francisco when mom, grandma and grandpa and I went to visit back in 1978. Very good.
