2 pkgs. (20 oz.) chopped, frozen spinach
2 C. crushed croutons
1 large onion, chopped
6 eggs
3/4 C. melted butter
1/2 C. Parmesan cheese
1/4 tsp. garlic powder
1/2 tsp. thyme

Directions:
Refrigerate. Mixture will be gooey. Form into ping pong ball size balls. Place on lightly greased cookie sheet. Bake at 20-25 minutes at 375 degrees.

You can also microwave them for a minute or two. I like to salt them before cooking or part way through the cooking so the salt sticks.

Can be frozen in an uncooked state and cooked later. Arrange on cookie sheet and freeze before putting in ziplock bag.
