5 slices bacon, cut in small pieces
1 cup medium chopped onion
2 tablespoons finely chopped jalapeņos
2 cups chopped tomatoes
1 garlic clove, minced
pinch of salt and pepper
3 cups water
2 beef bouillon cubs or 2 teaspoons instance bouillon granules
4 (15 1/2 ounce) cans black eyed peas, drained
3 cups grated cheddar or Swiss cheese

Directions:
Directions:
Saute bacon in saucepan until lightly browned. Saute onion, jalapeņos, tomatoes, garlic, salt and pepper in bacon drippings. Add water. Dissolve beef bouillon cubs in the mixture. Drain liquid from peas and add peas to soup. Add cheese and simmer gently until cheese is melted.
