Beef Stroganoff Recipe

1 1/2 pounds beef tenderloin or sirloin
2 tablespoons flour
3/4 tsp. pepper
1/2 cup chopped onion
1 clove garlic, minced or 1 tsp. chopped garlic
3 T olive oil

1 1/2 cups water
2 tsp. beef boullion granules
2 T tomato paste

1 1/2 - 2 cups sliced fresh mushrooms
1 1/2 T olive oil

1 1/2 cups sour cream
2 T flour

Thinly slice meat across the grain into roughly 2" strips. Toss meat with flour and pepper to coat. Heat olive oil in skillet and saute meat, onions and garlic (may divide into two batches if necessary). Cook until meat is browned on all sides.

Transfer to a 4 quart pot. Dissolve boullion granules in water, mix in tomato paste and add. Simmer covered for 1 1/2 hours or until beef is tender. Saute mushrooms in olive oil and add. Stir flour into sour cream, add, stirring gently until sauce thickens (do not boil).

Serve with noodles or rice.
