Leftover mashed potatoes
Flour
Salt & Pepper
Onion (optional)

Directions:
Directions:
If potatoes are cold, mash them with a spoon until you can add ingredients to them. Sprinkle a little flour over the potatoes (about enough to cover them) and drizzle some water over the flour and potatoes. Mash with fork or spoon until mixed together. Salt and pepper. Add finely diced onion, if desired. The potatoes should stick together, if not, add more flour and water.

Have oil in a skillet about 1/2-inch to 1 inch deep and hot. Put spoonfuls of potatoes into hot oil and mashed down into a patty. (Be careful not to splatter hot oil).

Cook until golden brown on one side; turn over and brown second side.
Remove and serve.

It might take some practice to get this right because the proportions depend on how many potatoes you have leftover. It will be worth the trials though.
