lg roasting pan

15 c popped plain popped popcorn ( about 1/2 c kernels or so)

1 1/2-1 3/4 c light or dark packed brown sugar********I prefer the light

12 tbs unsalted butter ( 1 1/2 sticks) cut into 6 pcs ) plus more for coating the pan

1/4 to a 1/2 c ( depending on the amount of brown sugar used ) light corn syrup I suggest Karo good stuff.

1 tsp fine salt

1 tsp vanilla extract

1/2 tsp baking soda

honey roasted peanuts, cashews, ??? optional

preheat oven to 250 º

coat the pan with butter place the popcorn in the pan set aside.

in a heavy- bottom sauce pan over medium heat mix the b sugar, butter, salt and syrup bring to a boil stirring occasionally with a rubber spatula until the until the sugar is dissolved (about 5 min ) ********************* Be careful not to scorch
continue to boil without stirring for about 3 min

remove from heat add the vanilla and baking soda stirring with a whisk until it foams up and doubles in volume ( about 10 sec.)

immediately drizzle over popcorn ( add nuts if desired ) stir with a rubber spatula until thoroughly coated and place on the middle rack of the preheated oven.

stir every 15 min for 45 min take some out and let stand for about 30 sec. if it's crispy it's done if not bake another 15 sec if it's still not crunchy

Well your a failure and should hang your head in shame.
